Tianyi Cui 44dd60de91 test(native): pin the packing fixtures to the repository pnpm version ...

The fixture workspaces declare packageManager, so corepack resolves that
version when pack-release runs pnpm pack inside them; leaving 11.7.0 there
would exercise the version this change replaces.
